I truly enjoyed this dip. I made it for the superbowl and my family and friends went wild. There were so many other snacks, but let me just say this was the first to go. Thanks so much Emeril!

Was very good. Was very thick and creamy as desired. Had some really bad, runny dips at various chain restaurants. This recipe is what I'm looking for. I added a handful of extra parmesan for extra cheesiness. Didn't handmake the tortillas but store-bought them to save time. I'm more interested in the dip than the chip. Will be making it again this weekend.

I found this recipe to be easy, forgiving and versatile. What I mean by versatile is that you can make it your own by changing it to fit your's and your family's taste. For instance, my family and I don't particularly care for artichokes that much. So, I substituted mushrooms instead. My family and I are also big cheese fans. At first I just doubled the cheese in the recipe but in the end I wound up QUADRUPLING it. Also, being from Louisiana, I felt it was a duty of mine to almost triple the amount of cayenne in the recipe. A fun thing to try, if you're up for a small challenge, serve the dip with fried bowtie pasta. This is fabulous. Cook the pasta al dente. Bread it in 1.flour, 2.beaten egg, and 3.italian bread crumbs. Fry at 350-360 degrees until golden brown. Enjoy!

I made this for a number of get togethers and both children and adults alike loved it. Great recipe....nothing like those quick mayonnaise dips. This dip has alot of flavor depth and texture...Delicious...people are always scaping off every little bit off the bottom of my baking pan with the tortilla chips (sometimes I cheat and use store bought tortilla chips.

This was a wonderful and easy recipe. very mouth pleasing but I have to admit. I kicked it up a notch: more garlic, more red pepper, and a little white pepper as well... frozen steamed spinach is just as good... you cant go wrong.... live a little.... adlib a little

Recipe is decent. But if you really want a delicious spinach-artichoke dip, add alot more shredded cheese and lots and lots of cream cheese. Trust me, it will make this recipe 100x better.
