Great flavor. The jerk was a little on the milder side than I expected. The sauce was great as well, but made way too much for our family.

Okay, like they say on T.V. don't do this at home! I used 5 Habanero's seeds and all to make it spicy enough for my husband and I! I know it's crazy but...We like it hot! And it's just a marinade. The flavor, and yes we could still taste the flavor, was excellent! Please if you are going to substitute for the Scotch Bonnet, use a Habanero and simply de-seed it. Then it is not as hot but lends it's flavor. Do use gloves! And for those of you converting the ounces to cups, buy a kitchen scale. They're not that expensive and they come in real handy! We used it on wings but can't wait to try it on plain, old, boring chicken breast!

This is the best chicken I have EVER cooked!!!! If I could give it 15 stars I would! I didn't even have all of the ingredients on hand, so I had to wing it a little... Instead of the scallion, thyme, allspice, nutmeg, hot pepper, and vinegar I had to substitute some creole seasoning and louisiana hot sauce... This turned out AMAZING!!! I am recommending this to all of my friends and families to try. A+++++++

Excellent flavor and wonderful combination of sweet and spicy. I served with sweet potato fries. Definitely one to add to the recipe box.

OMG-this is probably the best recipe so far I have ever made from this website-the smell of the marinade is unbelievable....marinated boneless skinless chicken breasts overnight -the flavor was absolutely delicious...cut the cucumber recipe in 1/2 and still was too much-but worth it-very tasty-thinking of putting all the leftover sauce on maybe chicken wraps.

This recipie was very good, however it is widely known Bob Marley was a vegetarian. I hope his family gets royalties for the use of his name. To answer dschulze1218's question- 25 oz of cucumber is by weight, but roughly (not exactly as nothing in cooking is ever exactthree heaping cups. 7 oz is a cup minus 2 tablespoons and a half oz is 1 Tbsp.

I was looking for a new chicken marinade and this did the trick. I thought the cinnamon might be overwhelmed but actually the flavor was very well marinade altogether with a slight cinnamon taste in the background. Made this with Rachel Ray's turkey club salad but opted out the turkey for this chicken instead. My bf liked the cucumber sauce for the salad's dressing and i used Rachel's. I only marinade my chicken cubes for about 6 hrs. and came out just fine.

Does anyone know the exact conversion on the dipping sauce from ounces to cups and tsps?
