    I'm always looking for a healthy grilled chicken breast recipe and this one is definitely a keeper. Most jerk recipes are bland but in this recipe the chicken breast came out tender and the cucumber sauce was a great addition. I served this with fresh pineapple, mango and Jamaican rice and peas. I couldn't find scotch bonnet peppers so I used one serrano chile and it had just the right amount of heat. Use one more if you like medium/high heat.

    I have used this recipe a number of time to entertain with, it's fantastic and always gets rave reviews! I prepare the skewers and marinate the night before, throw them on the grill just as guests are arriving, and keep them warm in a crock pot for the late-comers. They never dry out, and the sauce is incredible, so keep the extras, it's great on everything!

    These were very tasty! I grilled them for company this weekend and everyone loved them. I couldn't get scotch bonnets, so I used one jalapeno, and it was barely tasted. I would do them spicier next time. Also I alternated fresh pineapple, mango, and vidalia onions with the chicken on the skewers. The cucumber sauce was good, but made way too much, I would cut it in half for next time. But I will definitely be making this again.

    i made this with turkey instead of chicken & went light on the hot pepper. it was awesome! the cucumber sauce made it extra good.

    I have actually been to the Bob Marley Cafe where this is served and it's my favorite (Actually I get the chicken in the form of wings and not skewers. We live fairly close and any time that we go near the cafe, I have to stop to eat the wings and wonderful cucumber sauce. I kick it up with a touch more cayenne.
