These are fabulous! My son puts the oysters on a hot grill for a minute and this pops them open and then he returns them to the broiler with all the goodies.

We cook the in a little annisette into the spinach spoon, one tablespoon of spinahc mixture into each shell, add one oyster on top of the spinahc mixture, sprinkle with parmanciean grated cheese , and top each with one tablespoon fresh hollondaise sauce. place under the broiler for two to three m inutes until it starts to bubble. Serve at once.

The iron skillet is wonderful because it cooks fast and brings the heat up throught the rock salt to heat all the way through without drying out the oysters.

This was really easy to put together, although there are a few steps. Definitely a keeper. I used a muffin pan to divide out my servings. While they don't pop out, this worked extremely well.

I found this recipe on my cell phone when I was in a hurry to get home and make dinner. This is a quick meal with wonderful flavor. I only had a pound of spinach so I halved the Creamy Dijon portion of the recipe with good results.

Also, instead of using cooked spinach, I just wilted the fresh leaves into the cream sauce at the end of cooking the sauce. This dish was fast to put together, easy to make and it tasted like a lot more work went into it. That's a winner in my book.

this recipe was a disaster. first of all, it was very poorly written. if i hadn't seen it prepared on the show, i couldn't have made much sense of it. where was the cast iron skillet mentioned? next, the proportions were all wrong. the recipe called for double the amount of trinity actually necessary. the amount of dijon was WAY too much. as a result, the delicate flavor of the oysters was completely, heartbreakingly lost. and at the price of oysters!!!!
