I found the sauce incredibly sweet and also an abundance of it. The salmon was great and I love the whole concept but a pound of sugar? It seemed excessive when I was making it but was hopeful that it would balance itself out. This was not tested b/c Emeril is off of the show, but I do believe with a little test kitchen re-vamping this could be a five star dish.

My family commented this is the best salmon they have every eaten. The flavors mellow the fish flavor, for those who like a milder fish. It is delicious!!!

Im very glad to hear that you all liked my recipe. Another suggestion to the sauce on top of crushed red pepper, is about a tsp. of orange zest. : happy eating
