This Gumbo is really good. I subbed Cajun Spice mix for the Rustic Rub.

This recipe produces a darn fine gumbo that is reasonably easy to make. Invest in some really good Andouille and you're gonna love it!

Fantastic recipe. I even won with this one in a friendly group taste test against a New Orleans native's shrimp ettoufe! I use beef broth instead of water and I saute the sausage and drain on paper towels before adding to the pot. I also add a pound of fresh local shrimp covered with Essence when it is almost done. A hit every time.

This was outstanding, one of the best recipes for gumbo I've tried. I live in Arizona where it's harder to get the ingredients for traditional seafood gumbo (or not "hard" so much as "expensive" so I'm ecstatic to have found such a satisfying recipe! Solid flavors with just the right amount of heat. I can tell this is going to become a staple around my house.

Very good. I added a package of orka, corn and jumbo shrimp. Awesome.

I thought the Gumbo was very tasy. I am
a person who usually salts alot of my
food & I found it a bit salty. It was
just a little bit of "overkill" w/the
    spices for me.
Next time, I'd lower the salt level &
cut back just a tad on the spices.
    Otherwise, good flavor.

Emril knows his food. I've made this for many people - and everyone loves it! It's a "safe" gumbo for those that may not like seafood, but with just as much flavor!

Loved this recipe. It wasn't quite spicy enough for me,however, that was easily solved with more cayenne pepper! Very easy to follow and easily adapdted to suit anyone's taste.

This was the recipe that began my love of cooking almost a year ago. What can I say? This is an easy recipe, but labor intensive (but that's the fun part! Very easy to follow.
