Does anyone know how the recipe would be affected without adding the eggs? I don't mind serving it for myself, but am a little leery of serving it to extended family with the raw eggs.

Sorry Anonymous, this is far from Ponche.
This recipe has similar ingredients to my Grandmother's, which everyone loved!
However, she never never ever added ice cream to it.

If you use eggs is not a Coquito, but Ponche.

We served it at our Christmas dinner and everyone loved it. We used the recommended reduction of the Rum and it was just perfect it.

found it a bit too strong so I lightened the liquor content a bit and it was awesome. I've made this twice now; the first time as directed with 2 cups of rum, the second with 1.25 cups. 2 cups was a little too bold for some of my family but the 1.25 cups was just great...not too strong but you can still taste it...and after a few, still feel it too.
