Cooked for family and it was a big hit. Meat was tender and flavored. I thought the garlic would overpower and it didn't.

I made this for an extended family dinner and everyone loved it, from teens to an eighty-something year old. Suspend your beliefs and follow the recipe exactly and your dinner will be a hit.

I cooked a chuck roast in the crock pot for 4 hours on low with the beef stock based on others' reviews that it cooked to fast. I finished it with an hour in the oven with the veggies. This was not enough time for the veggies to finish cooking completely. I though the chuck roast was too fatty, so If I make again, I would choose a leaner roast. Also, the "gravy" turned out much too thin.

My wife could not make a pot roast to save her life. We needed a chain saw every time, so with Emeril's help I showed her how to do it. It turned out excellent, it just fell right appart with the touch of a fork. Thanks Emerill.
