    Very health dish and very easy to make. The key seems to be the slow cook with the dutch oven to both tenderize the roast and to blend the wonderful flavors of the vegetables. I also threw in ~6 oz of full bodied red wine with the broth.

    I prepared this roast as a Saturday Dinner. Very nice!! Tender and juicy. The whole family loved it! Including the children whom are very picky eaters.
