Ingredients

  • 1 tin anchovy fillets
  • 1 package spicy Italian sausage
  • 2 pounds fresh hamburger meat
  • 1/2 cup minced onion
  • 1/2 cup chopped mint leaves
  • 2 cloves garlic, finely minced
  • 1 teaspoon Italian seasoning
  • Salt
  • Freshly ground black pepper
  • Lettuce or spinach, for garnish
  • Thinly sliced tomato, for garnish

Directions

For the Bread:

  • 1 loaf Italian sweet bread or other good Italian bread in classic loaf
  • 3/4 clove garlic, minced
  • 1 small onion, finely minced
  • 1/2 cup olive oil
  • Salt
  • Freshly ground black pepper

Preheat the grill.

Smash the anchovies into a paste with the back of your knife or a mortar and pestle. Remove the Italian sausage from its casing and add to a large bowl with the hamburger meat, smashed anchovies, onion, mint, garlic, Italian spice, salt and pepper. Mix all ingredients well.

On a clean work surface, or a cutting board covered with plastic wrap, pour out the meat mixture and shape into a flat rectangle approximately the width of the loaf of bread and about 1 inch thick. Cook's note: You can make the rectangle a bit larger than the loaf of bread since the meat will shrink slightly during cooking.

Cut the flattened hamburger in half, making 2 large patties for grilling. Place the patties on the preheated grill and cook until the ground meat reaches an internal temperature of 155 degrees F.

To prepare the bread, first saute the garlic cloves and minced onion in olive oil until they soften, about 3 to 5 minutes. Season with salt and pepper. Cut the loaf in half horizontally through the center to create 2 long pieces, top and bottom halves of the loaf. Paint the inside of each piece of bread with the oil mixture, coating them well. Remove the burgers from the heat and hold on a covered plate. Place the 2 bread halves on the coals, painted side down, to toast.

To serve, place the burger patties on half of the toasted bread, add the lettuce and tomato slices, if using, and then top with the other half of the bread and cut into 1- to 2-inch slices.

    A Treat For the Fans

Rated: 5 stars out of 5
I made this for our Super Bowl party and it was a HUGE hit. I cheated a little and bought anchovy paste, eliminating the... need to make a paste of them myself! I also went with a super lean meat ground beef, so my patties did not "cook down" much. Will pat them out a little thinner next time. And, OOOOOOH how good this will be this summer when my homegrown tomatoes are in season!Read more

This hamburger is so full of flavor and so much fun to eat. I cooked it in the broiler because I don't have an indoor grill.... Can't wait to try it on the grill this summer. Thanks for the great recipe.Read more

I enjoyed every bite*****. But a few of my Super Bowl fans were less enthusiastic***. I used ciabatta bread and maybe to many... anchovies. The cibatta bread was great, next time I will back off on the anchovies, and mint. It was easy and has a great party look.Read more

    Best ever

Rated: 5 stars out of 5
I downloaded this recipe in June, and only tried it today---it is easily at the top of my "best" list of hamburgers. Thanks... to Emeril and thanks to the guy who entered it. PS Don't worry about the anchovies---they don't over power, but add to the Italianess of the flavor.Read more

    Ultimate Burger!

Rated: 5 stars out of 5
I've made them three times now and every time they get rave reviews! Maybe go less on the anchovies for the scared but... otherwise it's awesome and a fun twist on the usual burger. Homeade marinara is really good too on this for the sauce. Also baught filone for the bread and it worked great!Read more
