    Great recipe but wow it was spicy and we like spicy. Next time I will remove the seeds from the pepper and use only half as much cayenne. I used the dried beans cooked with stock for 1.5 hours and there was no liquid at all when I added them to the dish and so there was no issue with it being soupy at all.

    For my daughters birthday I made a Mexican Fiesta.. I found this recipe while exploring my food selections. Needless to say this was not a hard recipe to make but it was by far the favorite food of the night. I could not understand how this tastes so good but it was wonderful. The only thing I did different from the recipe was I cooked the dry peas and it was delish. In fact, my son's 40th birthday is coming up at the end of the month and he said he wanted the same thing, Mexican but specifically the Black eyed peas cassarole.. Thanks for the recipe it definately was a hit.

    I have made this twice and it is so very good. I agree with the other reviewers, it is very soupy. I used 3 cans of DRAINED black-eyed peas, and drained the tomatoes also. The recipe did not list how many corn tortillas to use, so I used a large package of 20, hoping it would soak up some of the liquid. I took it to church for a potluck and everyone loved it. Some guy yelled, "hey, who brought this mexican mushy stuff?" Now we all call it Mexican Mush. Thanks, Emeril!

    If I could give it 10 stars, I would. I did not drain anything except 1 can of black-eyed peas ( I used 2 cans I did not use the jalapeno because I used hot enchilada sauce instead of mild, and I only had about 8 tortillas and a cup of shredded cheddar so that is what I used. It turned out juicy/runny so I made a pan of corn bread to serve with it and it worked out perfect! My husband and daughter loved it! Between the 3 of us there were not many left overs and my husband ask for them for dinner tonight!!!! I was in shock! Thank-you for an awesome recipe!

    This recipe was GREAT!! I used 3 cans of black-eyed peas - HOT enchilada sauce (on accident - 2lbs of ground beef and garnished with sour cream it was the perfect consistancy and my family LOVED it - my son doesnt like spicy or black-eyed peas and he had seconds!!! Will make this again and would be a GREAT dish to take to a pot luck!! THANKS Chris Owens...

    I cooked this recipe tonight for a family gathering and it was simply AMAZING. Yes, drain all canned ingredient, of course with the exception of the condensed soups. My hubby LOVES my cooking, however I don't alway 'hear' his appreciation for it.. But for this casserole, he said this was absolutely WONDERFUL!!! He wants more and more and more---make this if you don't make anything else from this website!--Kendra

    Kudos to the guy who donated this recipe on Emeril Show. This is a great dish to serve at any Sports Championship, Event, Pot Luck or whatever. The flavors all went well together. It really reminded me of a Mexican Lasagne but was very tasty and flavorfull.

    Great recipe....however not sure if I did something wrong...my casserole was on the soupy side??? Came out more like a dip?? Not sure if thats right? I Watched Emeril make this and don't remember it soupy? Can anyone shed some light on this? Help......

    I've made this dish twice and love it! I make a few modifications for a slightly less decadent version: Greek yogurt (lower in fat and higher in protein instead of cream of chicken soup and I use very lean ground beef or bison. All of my cheeses, canned items and tortillas are also organic as I am blessed to have a Whole Foods in my neighborhood and their house brand is quite affordable.

    I also agree with others that you need to really drain all of the canned ingredients. The greek yogurt thickens the sauce up a bit, but it is still pretty runny.

    It has great flavor but we wished we would have drained the tomatoes because it did come out like a thinner then we would have liked. This did not stop us from eating and enjoying it though. I would definitely have some sour cream on hand to put on top to finish it off.
