    Will definitely make this one again! The combo of the black-eyed peas, cream of mushroom, and cream of chicken was unexpected but so very delicious, not to mention easy to throw together for a last minute meal.

    A meal in itself! My two year old loved this as well as my husband...A winner all the way around and leftovers are great too.

    This was the best recipe I have ever found on line. My husband ate almost the whole casserole himself. It was easy to prepare and will definately be among our family favorites.

    and more awesome! Seemed a tiny bit runny, so I'd recommend draining the diced tomatoes. But, this is guaranteed to be a frequent dinner for us.

    At first, I wasn't too sure about this one. Then, as Emeril was putting it together with the gentleman who submitted the recipe looking on, I became intrigued.
    I made it for a Super Bowl Party at my in-laws. It is remarkably easy and very good. Everyone complimented the dish.
    It is a little hard to find Enchilada sauce in the Philly suburbs, but mission accomplished.
    I'm looking forward to making it again.

    I just finished making, and eating, this casserole. It's true - the discrepancies may absolutely no difference at all. The casserole was delicious. I prefer a lot of spice, so some extra dashes of the hot sauce and a little bigger jalepano was great. Very easy to make. This can be used as for tacos, nachos or other dishes like that. Next time I will use a little thinner tortilla as well as a flour one. The corn taste was somewhat overpowering -- but then again, it could have been the brand. Great food.

    I made this the day after we saw it on TV. It was so easy and tasted so good! I was aomehwat wary when I say both Cream of Mushroom and Cream of Chicken soup (don't they kind of cancel each other out? Boy was I wrong! Mama knows her stuff because this dish is fantastic! I did, however, omit the hot sauce as I can't take too much "hot"." I also substituted Flour tortillas for the the Corn. Love, love love this dish!!! We have been eating for 2 days straight and it tastes just as good re-heated in the oven and/or microwave. I am making it again for the Super Bowl party we are going to this Sunday. Thanks so much for the recipe.

    No big deal - watched the show, read the recipe...turns out basically the same in the end. It is a casserole, can't really mess this one up!
