I've made this dish twice. I use ground turkey instead of beef. The second time I used fresh peppers and onions, added half of a can of drained black beans and half a 4 oz. can of diced green chiles and a pinch of cayenne to the corn mixture. It's much better with fresh ingredients. It's very easy to make and tastes great. It tastes even better the next day for leftovers.

A friend of mine made this to bring camping last weekend and it was just delicious!!! It was easily prepared and baked up in a jiffy. She did say that fresh onions and peppers gave it a little better taste if you have the time to cut them up. Definately a recipe to keep handy!
