No evaporated milk??? this sounds strange eggnog is harder to find, but it does taste yummy with it.
Anyway adjust the cooking time and add 14 oz of liquid to a 15oz can of pumpkin.
You start out at a high temp cook for 15 minutes and then lower to 350 and cook for an additional 45 minutes or until the knife comes out "clean"
Cooking times doe vary depending how much liquid is added.

Made this pie for Thanksgiving. The whole family loved it. I followed the cooking directions on the canned pumpkin as suggested by other posts. Great recipe

Kind of funny that someone in Beverly Hills is complaining that Pumpkin pie ingredients aren't cheap! Maybe try shopping outside of BH?

IT WAS TERRIBLE. THE PUMPKIN MIXTURE ITSELF WAS GREAT. BUT THE TEMPERATURE WAS ALL WRONG . I LEFT IN IN TWICE AS LONG AND STILL WAS NOT DONE. I SHOULD HAVE LISTENED TO MY SISTERS. THEY GOT IT OFF THE PUMPKIN CAN. I NEW IT WASNT RIGHT BUT I LIKE TO FOLLOW THE RECIPE FIRST HAD TO THROW IT OUT WHAT A SHAME. YOU SHOULD PUT THE RIGHT TEMPERATURE. I DONT THINK I WILL GET ANOTHER RECIPE OFF THIS SITE AGAIN. NOT CHEAP INGREDIENTS.

Everyone who tried this pie said it was delicious. What I did find was that the cooking time and temperature were not right. I used the time and temperature on the pumpkin pie filling can which was different and the results were much better. Sorry but I can't remember the time and temperature. I have made this pie with different brands of canned pumpkin pie filling and the time and temerature were the same for all of the brands that I used.
Also here is an idea for a great topping for this pie. One box of Jello Instant Pudding (I like vanilla but you can use any flavor you like Substitue the two cups of milk called for on the pudding box with 1&1/2 cups heavy whipping cream and 1/2 cup of half & half. Whip the pudding mix with the cream and half & half with a hand mixer until it thickens and then chill in the refrigerator. This is essentially taking the pudding and turning it into a parfait.

Everyone is so critical! Yes yes, you could just use cream or half and half, but eggnog is so creamy AND adds all of that extra autumn/winter spice, as well!! I think it sounds like a great idea, and I don't think I would have ever thought of it myself : (plus, it's all frothy, which I assume would make the pie fluffy, creamy, and delicious! I think I'll try it!

Sure - it seems like a nice idea, but if I'm lacking evaporated milk, it's not like I've really got egg nog laying around either. Another reviewist suggested substituting with half and half or cream. That makes more sense to me.
