I changed this recipe up to make it more like a chile than a soup (less chicken broth, drained the vegetable cans and it turned out great.
I was hesitant to put the cream cheese in at the end, but it added a great flavor to it. Maybe next time I'll add less, though. I used fat free chicken broth and low fat cream cheese and it turned out great!
Definitely serve this with crackers or and shredded Monterey Jack cheese. I can't wait to warm this up tomorrow!

This soup is very tasty. The cream cheese adds an awesome and unexpected flavor and texture. I highly recommend trying it. Plus it is very simple. I buy a already roasted chicken at the store and have very little cook time.

This was a very good recipe and my family loved it. The next time I make it I will use a little less Cream Cheese
and it will be just a little sharper.

Very easy to make and delicious. The hominy is nice in this stew. I was out of peppers but added carrots instead. Even my 2 year old enjoyed it.

This soup is so good! A little thick so I added some milk to thin it out. Otherwise, it is very good topped off with mexican chesse, sour cream, and tortilla chips. Will definitely make this again.

I couldn't find the hominy, so I didn't include it, and for cream cheese I used a roasted garlic cream cheese. the soup was awesome! and the ingredients were so simple.

My husband and I loved this soup alhtough I did make some adjustments. Red Bell instead of green, only used 1/2 the cream cheese (we use tofu so it may taste diff, kidney beans and pinto beans instead (I've never even heard of hominy and our store didnt carry it, and I used fresh roasted salsa from a local mexican market which made it 100% better than it already is!

I made this for my husband and I one night. I didn't want to stop eating! I have since made it and given the recipe to both our families and they love it as much as we do. This is definitely a keeper!!!!Thankyou Emeril!!!!!!
