    I made this recipe yesterday for our Lenten Soup Supper at our church. Everyone who tried it is asking for the recipe. It was easily the favorite last night and there were some good soups - Crawfish Chowder, Cream of Artichoke, Cream of Mushroom, ten different soups in all. It is really delicious and easy to make. And it is so different from the usual taco soups made with beef.

    We really enjoyed this soup. Alot like an enchilada soup. I didn't have a can of corn (crazy huh? but, I added a can of black beans, rinsed. I didn't have green bell so I put red bell. The only thing I'll do different is ease off on the tomato paste. I had two cans but don't know the exact ounces. I'd probably put only one in and add some rotel or diced tomato to supplement if necessary. A little bit thicker and you could use it as a dip.

    Wonderful soup! I used black beans instead of hominy because of my son and hubby's taste (and we are from the South can you believe they don't like hominy!. Awsome taste for such a quick soup. My 8 year old practically made it by himself. We warmed the leftovers up the next day and served it over rice. Thanks Lauren for such a great recipe...when do you get your own show ;

    This soup is delicious. It is creamy and hearty. Depending on your taste and who you are cooking for, you can modify "heat" by your choice of two ingredients: taco seasoning mix and salsa (mild, medium or hot. I might add a splash more chicken stock or some of the liquid from the hominy and corn next time. I drained both. The soup has a texture similar to chili. It is a meal in itself and has already earned a place in my recipe box for many future meals. A great choice for a fall evening or a crowd over for a Sunday afternoon football game. And guess what? No BAM! Not needed here.

    I just copied this recipe & can't wait to try it. It's so nice to hear people rave over the things I cook. I have a great "teacher"! My 3 yr old daughter LOVES to imitate you by shouting "BAM!" while she cooks at her kitchen set!

    This soup is out-of-this-world! So creamy!

    Would make an amazing dip for a party if you make it extra thick! Serve with tortilla chips and your guests will think this is the best taco dip ever served!
