    This was lots of fun to make. I had to order the quick cure salt online but once it came I was ready to roll, literally! I served it as Pepin did over French potato salad. The nice thing is now I have the technique of how to do any type of sausage and can use recipes that call for casings and just ignore that and do it using this method.
