I was a little leary of the combo, but I like to try new things so I did just that and am glad I did. I could not find the tarragon fresh, so I used all dried herbs in reduced measurements. This soup is amazing. I was surprised at how smooth it became once it was blended together. There were no chunks, just a smooth creamy texture. My husband liked this soup, I however, loved it and so did the girls at work. The tortellini was just ok, however was a nice touch, but this soup can definately be consumed without the tortellini. My first Emeril recipe. The first of many more to come. Soup alone receives 5 stars. Soup with tortellini is a 4.5 star.

When the warm southern California weather finally cools down enough for soup making, the first soup everyone requests is this gem. The onion flavor is mild, and the crunchy tortellinis add fabulous taste and texture.

My wife and kids ask for this soup whenever it is cool or rainy outside. Make more tortillini than called for!

This soup is wonderful. It's quite easy to make also. The fried totellini is a really nice touch. I've never seen this done before, but it is very easy and adds the perfect crunchy topping to the soup. I don't have a hand held blender, so I just poured it into my big blender and it turned out great. A little messy, but very creamy.
