Everytime I have made this my family has loved it! Healthy alternative to many side dishes.

I made half a recipe since my husband's out of town, but I wish I would have made more because I already ate it all! I didn't have artichoke hearts and had to use dried tarragon instead of fresh, but it was still fantastic! For my personal tastes, I think using all of the vinaigrette would have been too much, so you might want to add half to start with, like another reviewer suggested. Hope you enjoy it as much as I did!

This recipe was fantastic! I love finding new ways to fix vegetables and this one is a winner! Even my 15 month old enjoyed this dish, she loved the mushrooms and asparagus! I used dried tarragon instead of fresh but it worked just as well. As a beginning cook, this recipe was easy and stress free!

I have had this 3 times at different dinner parties. First two times, just as the recipe calls for (except thyme because do not like tarragon. wonderful and rave reviews. Last night had sauteed Chicken Italian Sausage and cut that in slices and added it to the vegetables. Great main course! People were trying to sop all the juices with their bread. This is a great recipe and the vainagrette is what makes it so good. I have substitued other veggies for the asparagus and it still was good. But the asparagus is the best. Great side dish or main dish. We just loved it all three times.

I don't like mushrooms so I substituted the mushrooms with fresh green beans. It came out wonderful. The green beans and asparagus still had their great color and crunch. The only thing I would say is watch how much fresh tarragon you put into the dish. It has a very unique flavor. I like the flavor, but I do not like it when it takes over the dish. But otherwise everyone loved this dish! My husband ate these vegetables before the dessert course for once!!

Everyone love this salad, children and adults both. This was incredibly easy to preare, my 11 year old daughter did most of the work!! And the taste, again, was delicious! Please note the I too didn't use all of the vinaigrette.

Even my extremely picky husband liked it. I agree with one reviewer to not add all the dressing at once as it may be a bit much. I also just used whole Trader Joe's sweet grape tomatoes and it was outstanding. Still tasted really good the next day. I will definitely serve next time I have a barbeque.

This dish was absolutely delicious as well as being a beautiful dish to serve. I am so happy I found it and will definitely make it again. I used dried Tarragon as I couldn't find fresh in my supermarket and it worked out fine. Very healthy, too!

I made this on Xmas day and served at warm(ish room temperature. With the leftovers, my husband sauteed colossal shrimp with oil & lemon and served over this salad. One night with crusty bread, the other with thin linguini.
It was a big hit on Xmas and thereafter. I will use this whenever I want to impress and on fridays during lent with seafood
