Made this last night and the family loved it. The chewy nutty grain is so different and good. Hard to find though. I recommend you call ahead to save yourself some driving around. I found it at a high end grocery store. This receipe is a keeper. It makes alot. I recommend cutting it in half if just for a few people

This is an excellent recipe - as usual Giada does not disappoint. I also pared this with roasted salmon and it was absolutely wonderful together. I will definitely be making this again and again. Try it!!

Delicious, hearty, fresh. My husband raved! Cooking time was much longer than Giada indicates in her recipe, however (maybe it depends on brand of farro?. The package I bought said to soak for 30 mins in water then cook; cooking time was an hour. Not a problem, but if time is a factor then you may want to do a practice run for this recipe.

I had to substitute wheat berries for farro, as my local co-op did not have farro.
The only difference is that wheatberries take twice as long to cook (1 hour.
Turned out beautifully, so healthy and delicious!

This recipe is the essence of the way I love to cook! I have never cooked with farro before so I am so glad I finally tried it! The farro is so hearty and has a great bite to it, they almost burst in your mouth. I definitely recommend making sure to actually use farro for this recipe and not substituting for brown rice or barley as Giada said on the show as there is really no comparison; the farro is THAT good! For the pesto, the thyme really made the flavor so lemony and fresh. I made this with grilled salmon and it was the perfect pairing. This recipe makes a lot of servings so I am glad to have the leftovers to eat all week! Thank you for the awesome, healthy recipe, Giada!!!

I eat a low glycemic diet and this was the perfect dish for me!!! I love all the flavor and textures in this dish. It's very satisfying and makes a great side dish with grilled chicken or fish.

I've been making this recipe at least twice a week for some time now. Light, healthy, satisfying, as always. I love Giada's salads. Thanks!

This was fantastic! I was not sure about using farro, since I have never had it before, so I used only half farro and about 12 minutes before the farro was done I added half israeli cous cous to the chicken stock. It worked out just great. It added a nice difference in texture, but held up well with the farro. The course pesto was just wonderful. Even my picky husband, who does not care for earthy grains, loved it.

I wanted to try this because it seemed like a healthy recipe. It came out great and even the kids liked it. This one is definitely a keeper! Thanks Giada!
