Not only is it easy but the flavor is soooo fresh and bright! I made a bigger batch and was able to freeze (it unthawed equally well. I've made this several times but haven't always used the fennel. That turned out just fine as well. I would bet it'd be good on fish too!

So yummy! I didn't have fennel seed so I substituted a bit of dried cumin and dried mint seasoning into the marinade. Don't know if it changed the taste, but it was really good and I'm really picky. I'm typically not a basil fan so I did decrease the amount of basil but I think next time I will use the whole amount cause it was good. I did decrease the lemon like other people said to do. Great recipe, healthy, fresh and fantastic!

So simple to make and yet so much flavor. Every time I make it, I think "Why don't I make this more often?" but the chicken HAS to cooked on the grill. I'm not a big fan of fennel but it's not overpowering....just a nice background flavor. I cut back a bit on the lemon juice, as I find Giada seems to go heavy on it in many of her recipes. I also pound out the chicken to a more even thickness for uniform cooking. Perfect light summer supper. And the basil dressing is also a perfect accompaniment to seared scallops!

Although the concept is good, the seasoning needs adjusting....way too much salt. Instead of 1 1/2 tsp use about 1/2 tsp, much better. I also don't care for the fennel in the marinade. The second time I made the chicken I left out the fennel and it was much better.

Totally delicious- lots and lots of flavor.
I made this for the first time for our family's annual memorial day cookout a couple of years agao and boy-o-boy was it a hit!!! My brother who went to culinary school was most intrigued. I also made the Orzo salad and they loved it as well.
    Thanks Giadia
