    This salad was a miss for me. I felt there was too much lemon zest and the parsley was very overwhelming. I also cooked the potatoes for 2 minutes longer than described, but they were still not tender in the salad. Overall, my guests and I thought this dish was just okay- not terrible, but not good either

    love this potato salad. make it all the time for parties. I just use roasted red bell peppers that come in the jar to help me out in kitchen. I also usually just use only red potatoes. this is a great dish during summer days and you are having a party/gathering and you dont want to serve a potatoe salad with mayo in it. This dish is just perfect. Everybody always loves it.

    This salad is amazing and refreshing. The flavors go great. Next time I'll add more green beans than potatoes. Also the dressing add a great flavor to marinated grilled chicken.

    I loved this! I didn't have red peppers, so I used tomatoes instead. I agree with some of the other reviewers that just one garlic clove is enough. I also cut down on the amount of oil, oregano and parsley. Its a perfect side dish with salmon and it looks so pretty. My husband really liked it and it was so good we ended up eating the entire bowl!

    Who would have thought all that lemon with the garlic would have worked? It was delicious! And nothing wrong with cutting back on the oil, I did, and it worked out fine!

    This is a VERY delicious recipe. The only thing I will change next time is -I will roast the garlic. The garlic is raw in this recipe and it is too overpowering (plus it gives you dragon breath all day. So next time I make it I will use roasted garlic. I will make this again and again. Absolutely fabulous!
