GOOD! Another go to light recipe for my repertoire.
Instead of the whipped butter, I used zero calorie I Can't Believe it's not Butter Spray on the bread. For the bread, I used Weight Watchers multi grain at 50 calories a slice.
The only issue I encountered was that the Laughing Cow Cheese didn't melt much on the grill, so I popped it in the microwave for an additional minute. Then I wedged my knife between the bread slices and smeared the cheese around a little so it covered the bread.
Next time I might try using sliced tomato instead of peppers.
All in all, another winner from Lisa!!

Made it for my family today and they all loved it! My husband and I are doing Weight Watchers and love to try many of her recipes. Another great one from Lisa!

I tried this for lunch today and loved it!!! I don't really like peppers at all, but I found that I loved the roasted peppers in this. I also love the fact that it's only around 200 calories and extremely tasty!

I tried this tonight, and let me say..it was GREAT! I used the Flat-Out Hungry Girl Foldit Bread. This was also the first time I tried jarred roasted red pepper also and it complimented the sandwich VERY VERY WELL! Added a LOT of flavor! I paired this with my favorite: 2 Roma Tomatoes tossed in 1/2 tsp of Olive Oil and it all came out to only 264 CALORIES!!!

Thought this was great. I didn't have light bread or "buttery" spread so I used real butter and high fiber bread. Still delicious. Just a little higher in calories. I did 1/2 the butter and it was just fine. Will definitely be making this again!

We really enjoy red bell peppers and peel skins off and cook tender ourselves.Less expensive.We omit the spreadable cheese and use a low sodium Swiss.No taste changes and again less expensive.People feel if they don't follow recipe to exact,they are wrong.Do the best You can.Any Changes for Healthy Food Choices works.This is a fast,simple "to go" Lunch.Add vegetables and dip.

This was wonderful. So creamy like you would expect with a grilled cheese and the roasted peppers added a nice touch! We paired with the cioppini and it was a super easy and delicious supper! Keep up the good work and I promise we will try more of these recipes.

Not only did I think this was delicious, I got my picky fiance and kids to eat it as well. They thought this was def a different take on the traditional grilled cheese. I loved it because the calorie and fat intake were drastically reduced and I didn't feel guilty eating it.
