    Although I was worried the filling would fall out during the frying phase, I found if you just squish the pepper around the filling with your hands during the dredging and battering phase and carefully place it in the oil the batter will hold it together as it fries. Messy process but it turned out great!

    First of all, it's very time consuming...charring and peeling the peppers took forever. The peppers were so delicate that it couldn't hold the corn filling. It would rip right through when placing the filled pepper in oil. I'm going to try a baked chile relleno next time.

    stuffing chiles is NOT easy

    The taste to this dish is fantastic, however, stuffing chiles can be a disaster. I wonder if this recipe can be converted to more of a casserole dish? I couldn't get the stuffing to stay in the chiles during the flour/batter phase, nonetheless the frying.

    My first time making this dish and i must say that i came very very close to my mother's chile relleno. The beer batter was in my opinion better than making it with egg batter.
