Although a little more complicated that I was looking for, this recipe is very good. It can be doubled easily for a big crowd, and the left-over batter freezes well.

My guest loved it. My root beer syrup never really reduced. I had to thicken it with a little corn starch. Next time I will double the amount of root beer syrup also because it was gone before the pancakes.

These pancakes are amazingly light, but rich at the same time....they are perfect around the holidays or for a cold night in the winter!
