Ingredients

  • 1 pound ground beef
  • 1 tablespoon fresh chopped parsley leaves
  • 1/2 cup white onion, chopped
  • 2 tablespoons bacon bits
  • Salt and freshly ground pepper
  • Vegetable oil, for frying
  • 1 pound egg noodles, cooked al dente
  • Stroganoff Sauce, recipe follows
  • Green Beans Almandine, recipe follows

Directions

In a large bowl, combine the ground beef, parsley, onions, bacon bits, and salt and pepper, to taste. Thoroughly mix the ingredients together, then form the mixture into 2-inch meatballs. Heat vegetable oil in a large pan and slowly add the meatballs to the hot oil. Fry the meatballs until they are browned on all sides and cooked throughout. Remove the meatballs from the pan and place them on a paper towel to drain any excess oil.

Serve on a bed of broad egg noodles with stroganoff sauce.

Stroganoff Sauce:

  • 1/2 cup chopped white onion
  • 1 cup chopped mushrooms
  • 1 cup chicken stock
  • 1 (12-ounce) can cream of chicken soup
  • 1 cup sour cream

Green Beans Almandine:

Heat olive oil and almonds in a saute pan. Add garlic, green beans and vinegar. Cook until the beans are al dente. Salt and pepper, to taste, then serve.

    I have to admit that I have my own beef stroganoff recipe, but I did make the green bean recipe. Not only did my son love it(he does like some veggies...! my husband raved over it. This man would not touch a veggie with a 10 foot pole!

    This was such a simple recipe and my husband and son (1 year old DEVOURED this 4-6 serving meal! That's how good it was!

    mmm! this recipe was extreamley enjoyable! However, I did make this meal without the green beans, cause lets face it, kids have trouble eatin there veggies plain, let alone with things on them they have never heard of before! so my stroganoff came out wonderful,but I did add a tiny Twist!My boys R bacon fanatics,so in the meatballs instead of bacon bits, I made half a pound of turkey bacon (healthier diced! and added it 2 my meat mixture! The smokeyness of the bacon really made the meal!Needless 2 say all 4 of my guys ate it all without any complaints. Which seldomely happens in my household!
