Ingredients
Magic Mushroom Burgers:
- 1 pound ground beef
- 1 packet fajita seasoning
- 1 tablespoon fresh chopped parsley leaves
- 2 green onions, minced
- Extra-virgin olive oil, for frying
- 1 pint button mushrooms, cleaned and stems removed
- 1/2 cup chicken stock
- 1 package hamburger buns
- Brie cheese, rind removed
- Pepper Slaw, recipe follows
- Sweet Potato Stix, recipe follows
Directions
In a large bowl, season the ground beef with fajita seasoning, parsley and green onions and mix well. After the seasonings are fully mixed in with the ground beef, form it into patties. In a medium sized grill pan, cook the beef patties until they are browned throughout.
Heat olive oil in a separate saute pan and add mushrooms, stirring frequently. Add chicken stock, salt and pepper to the pan and let the mushrooms simmer for approximately 5 minutes. Grill the buns open-faced on a grill pan, just until they begin to brown.
On a plate, rest the buns open-faced and place a burger patty on top of each bun. Finish off each burger with a slice of Brie and a spoonful of sauteed mushrooms.
Serve with Pepper Slaw and Sweet Potato Sticks.

Pepper Slaw:
1 Granny Smith apple, chopped
1/2 green pepper, diced
1 green onion, diced
1 cup red grapes
1 head red cabbage, shredded
1/2 cup chopped walnuts
2 tablespoons red wine vinegar
1/2 tablespoon granulated sugar
1/4 cup sour cream
Mix all of the ingredients together in a large bowl. Stir everything together until the flavors are incorporated and then set aside.
Sweet Potato Sticks:
Sweet Potatoes, quantity according to amount desired
Peel the sweet potatoes and cut them into matchsticks. Place a heavy skillet over high heat. Add about 1-inch of oil to the skillet and heat. Add the potatoes and fry until crisp. Remove the pieces once they are crispy and place them on a paper towel. Salt, to taste.

The burger was relatively easy to make. My family loved it. I didn't make the sweet potato fries or the pepper slaw this time but next time I'm going to give it a try.

This burger was ok, but not that great..I won't make it again. I may try potato sticks.
