This is a very forgiving recipe. I used walleye, frozen shredded zucchini and made my own breadcrumbs. It was still great.

Made the sauce, then skipped the frying. Put 2 tsp butter and 1/4 cup white wine in pan and then fish with sauce on top, covered and cooked for 9 minutes. Light, fresh, yummy without the frying. Served with asparagus and garlic bread. Keeper for a light weekday meal. (did not make the fritters

On a whim I was looking for something with no complicated ingredients that was healthy & appealing. Boy, did this fit the bill! So visually appealling, I would defintely serve it for guests.

The fritters were the only part of this recipe that I made, I only needed a side dish for the tons of zucchini from my garden.
