    The shrimp wasn't anything all that special, the cucumber & mango salad was good and no one could tell that the rice was cooked in coconut milk - I could've saved the can for curry.

    This was a balance of the sweet and the coconut rice! Couldn't get a fresh mango so I used mango conserve it was great! I would definitely make again

    I served this entire meal to my gourmet club when we had a tropical theme, along with some pineapple-marinated flank steak. It's easy and amazingly flavorful. The only modification I made was to add 6 cloves of garlic to the marinade from the beginning, instead of adding any right before grilling. I also had to settle for pineapple-mango jelly because I couldn't find any guava.

    Could someone please tell me what you're supposed to do after you drain the shrimp from the marinade? It says add chopped garlic and then put shrimp on skewers and grill. Add chopped garlic to what? The marinade? The skewers? (Impossible to do. If you add it to the marinade then what do you do? There is no more mention of using the marinade for anything so I did not get this. I want to make it because it sounds yummy, but want to do it right. Any help will be appreciated.

    OMG!I have been trying to nail this recipe for years.I love Garlic Shrimp and have to go our local Spanish eatery to get it.NOT any more!The chipotle peppers did it!This was fabulous!MY kids loved it so much they want it again tonite.Please use the amount of Olive oil and garlic,and the slower,longer cooking the better.Get some crusty bread,a bottle of wine and enjoy.

    The shrimp and coconut rice were absolutely wonderful! Instead of mango cucumber salad I made a mango and peach salsa served over the shrimp and rice and a japanese cucumber salad on the side.

    Made this for my inlaws and they really liked it. I thought that the rice and the shrimp were a little bland but the cucumber/mango salad was wonderful and fresh. I jazzed the rice up with crystalized ginger and a touch of brown sugar (From another foodtv recipe that used mangos
