    I saw a cake challenge on TV where one of the bakers made a carrot ice cream cake and I loved the idea. So I checked the site and found this recipe. But I am not a fan of making homemade ice cream I find it takes time and skill so I thought about it and altered the recipe for simplicity and my guests loved tha cake so much that they orded one for a baby shower just to be decorated more along the baby theme.

    All I did was follow the same carrot cake recipe but I boiled and purred carrots and mixed them into store bought vanilla ice cream and layered that carrot ice cream between to carrot cake layers. Than I took 8OZ cream cheese and store bought vanilla ice cream and creamed them together and iced that over the entire cake and chilled. When firm I used butter cream frosting to decorate the cake with ruffles and carrot toppings or for the baby shower I am topping with a baby and some flowers.
