Ingredients

Crust:

  • 15 to 18 shortbread cookies, finely crushed
  • 2/3 cup melted butter

Layer 1:

  • 2 ounces softened cream cheese
  • 2 cups whipped topping
  • 1/2 cup powdered sugar
  • 1/2 cup smooth peanut butter

Layer 2:

  • 4 ounces softened cream cheese
  • 4 cups whipped topping
  • 1/2 cup powdered sugar
  • 2 ounces melted German sweet chocolate
  • Whipped Cream, for garnish

Directions

Crust:

In a bowl, stir together cookies and butter with a fork until moistened then press into an 8 or 10-inch pie crust. Freeze.

Layer 1:

Beat together all ingredients, spread onto the frozen crust, and freeze for 5 minutes.

Layer 2:

Beat together all ingredients except for the chocolate. Stir in the chocolate. Place this mixture on top of the peanut butter layer.

Top with whipped cream and refrigerate until firm.

    I have been making this pie since it won the pie championship on the foodnetwork..... it's one of my family's favorites..... I use pecan sandies instead of the normal shortbread cookies and that's the only difference.

    I don't know why they rated this an "intermediate" recipie. Its ridiculously easy compared to other pie recipies where you make your own crust. I also believe that there is a mistake in Layer Two of the recipie. Try using only 2 cups of whipped topping(instead of the 4 cups called for like in Layer One and notice the improvement in flavor. Much more balanced and chocolatey!

    Also, easy on the butter when making the crust. Don't add it all at once. Follow these two changes and you'll have a winner on your hands.

    This didn't quite have the flavor I was expecting, but I gave it 5 stars because the 5 other people that I served it too all loved it. It was really easy to make. I think it got an "intermediate" rating because of the chocolate melting part. I did read the reviews ahead of time, and started with less butter. I used 1/2 cup instead of 2/3 cup and, wow! It was still too much butter. I used Sandies shortbread cookies, and maybe that particular brand already has a lot of butter in it I'm guessing. Either way, do NOT just follow the butter instructions. Start with less and add more if you have to. I also used the 1/3 less fat cream cheese, and it was still plenty rich. I'll definitely make it again, because it was so simple, there was no baking and everyone loved it, but I think I want to look for something with a little more flavor in it.
