Very tasty. But you need the pesto. The flavor added to the burger meat is deceiving. There is not as much as you would expect. The toppings are a must! I substituted the panko with a panko / ground flax seed combination to give a little more heart healthy punch.

coconut milk is a staple of Thai cuisine and contrary to some claims, it is very nutritious and healthy -- much more so than dairy, which is non-existent in Thai cooking. Pure, unprocessed coconut oil is also one of the healthiest things you can put in your body. Research it! But don't avoid it because of the bad reputation hydrogenized fats have given to healthy, non-hydrogenized fats.

The comment about coconut and peanut oil being bad for you is not true. If that is the case then how come people in countries that only cook with these items are healthier than us in america. It is all about quantity and activity of your life that makes natural foods bad for you. And coconut and peanut oil are very natural.

The flavors in this burger are extremely wonderful, we followed the recipe exactly the first time we made them, the second time we personalized it. I simply added pesto and a spicy peanut sauce together, it added more "heat" and we didn't do the coconut milk, because we really couldn't taste it the first round and decided we didn't need the added fat and calories. We did a bit more lime zest and juice to the burger and were really happy with the results.

These were fabulous. I messed up on the recipe, and forgot to reduce the coconut milk. Had to add more bread crumbs and drained some of cocount milk out with strainer. BUT these were still excellent,

    A keeper!

I changed and omitted a few things. Coconut is so bad for you I simply left it out and peanut oil is not much better so I replaced it with evoo. I turned it into a pasta pesto and added some grilled shrimp. My husband fell off his chair it was so good. Both my 2 & 3 yr olds loved it. I am going to make it again with the burgers but will use turkey instead of the chicken. Yummy!!

I made these as as tiny appetizers with the peanut pesto as a dipping sauce. Everyone loved them.

This recipe was luscious. My mouth salivates just thinking about it. We made it as stated, however we used smaller "grape" tomatoes, which made it easier to keep on the burger. The pesto is more crumbly than traditional pesto. I thought it would be really messy because of this, but it wasn't an issue at all. The flavors were so multi-dimensional & absolutely superb. Try it, you won't be disappointed. We accompanied these burgers with (baked sweet potato fries, which were perfect on the side.
