You can create up to five timers

Ingredients

  • 2 pounds calamari
  • 3 pounds luau leaves
  • 3 cups water
  • 1 tablespoon Hawaiian salt
  • 1/2 teaspoon baking soda
  • 6 tablespoons butter
  • 2 medium onions, diced
  • 3 cups coconut milk
  • 1 1/2 teaspoons salt
  • 1 tablespoon sugar

Directions

Clean calamari and slice into rings; set aside. Wash luau leaves, remove stems and thick veins. In a pot, boil 3 cups of water with the Hawaiian salt and baking soda. Add the leaves to the boiling water and reduce heat. Simmer, partially covered, for 1 hour. Drain, and squeeze out liquid. Saute onions and calamari in butter until the onions are translucent. Add the coconut milk, cooked luau leaves, salt and sugar. Simmer for 30 minutes.

    No, I haven't made this version of squid in coconut milk, but since Sam Choy could make shoe leather taste good, I won't give him anything less than five stars, because I wouldn't want to bring the rating down. That being said, I lived on Maui for 25 years and I can tell you that luau leaves are taro (kalo leaves from the taro plant. In Hawaii you can buy them fresh or frozen (which was what I used to make this delicious dish. You can get fresh taro leaves in a good Asian market if there is one in your town, OR you can use spinach as a substitute. I often made this recipe substituting Kalua pig (but that's even harder to find here on the mainland. Hope this clears things up for you...make it and enjoy. As we say, it is onoliscious!
