Classic Fried Chicken

Follow our simple rules for crisp, just-right fried chicken.

Give your chicken a buttermilk bath: It will tenderize the meat. Do not marinate overnight.

Coat the pieces in seasoned flour: It will give you a better crust than breadcrumbs.

Shallow-fry the chicken in a deep cast-iron skillet filled halfway with oil and shortening.

Once the crust sets, turn the chicken with tongs as needed to ensure even browning.

Drain the chicken on a wire rack, not paper towels, which will make your chicken soggy.
