Rhubarb Crumble

Directions

  1. Mix 2 cups chopped rhubarb, 1/2 cup sugar, 1 teaspoon lemon juice and a splash of vanilla extract in a small skillet. Cook until the rhubarb is soft, 5 to 7 minutes. Stir in 1 cup sliced strawberries. Divide among bowls, top with Greek yogurt and sprinkle with chopped toasted almonds.
