Sweet-and-Hot Pineapple

Directions

Cut a pineapple into small pieces (see Cook's Note). Microwave the grated zest of 3 limes on a paper towel until dry, about 1 minute. Mix the dried zest, 2 teaspoons salt, 1 teaspoon sugar and 1/4 teaspoon each ancho chile powder and cayenne pepper. Toss with the pineapple.

Cook's Note

How to Peel and Cut a Pineapple: 1. Cut off the top and bottom of the pineapple using a sharp chef's knife. 2. Stand the fruit upright and cut off the skin, following the curve of the fruit. Remove any remaining hard brown spots, or "eyes," with a paring knife. 3. Stand the peeled pineapple upright, then cut away the flesh from the core in four wide slices. Cut the slices into chunks. Experiment with other spices: Try a blend of cinnamon, sugar and allspice, or a mix of ground sesame seeds, sugar, salt and ground ginger.
