I messed up the recipe (by adding in the icing sugar into the mix and it still turned out great! Oh but they all ran together with all that sugar. Anyway, still super tasty and easy.

But there was very little "almond" flavor. I put in 1 tsp almond extract. Next time I'd put in 2 tsp. Also, let the cookies cool a little before removing them to the cooling rack.

My mom loves snowball cookies, so I decided to surprise her by making these after she got home from work.
I didn't have Almonds, so I used chopped Walnuts.
I didn't use almond extract, but I added cinnamon and nutmeg.
I whisked everything together because we don't have a food processor.
It turned out great! These cookies are so easy to make, and sooo yummy!
I already had all ingredients, so I didn't have to run to the store. I definately will be making these Christmas morning!

These were delicious. I didn't have any almonds, and no food processor. So I used 1/2 cup oatmeal instead of the almonds, and creamed the butter/sugar/flavoring in a bowl with a wooden spoon before adding the flour/oatmeal. I also didn't have parchment paper so I greased a sheet pan instead. Still turned out great, cooked 14 min and they were just chewy and gooey in the middle. I wanted to try Giada's almond frosting with them so I coated half of the batch in powdered sugar, and half frosted (frosting of powdered sugar/butter/almond extract. I liked the powdered sugar better! I can't wait to try the recipe without all the makeshift substitutions because it's hard to believe these can get any better.

Excellent recipe. I needed a higher yield for a cookie exchange party, so I tripled the recipe by first processing the almonds and sugar in the food procesor, then I finished the mixing by using a regular mixer. They were so good I made more later for friends and relatives!

I made these for Xmas presents for my twins teachers. Hardly had any left to wrap up because my picky twins kept eating them. They said it was there new favorite cookie. Will make some more today, just for the twins...
