The texture was a little off. It tasted almost grainy. I know that's from the broccoli, but I don't get that same sensation from the Panera soup.

I have high cholesterol and diabetes so it is always this foodies mission to take those recipes I love and make them suitable for my lifestyle. When I saw this recipe called for half and half instead of cream I knew I could make a "treat to eat".

I substitute non-fat half and half (don't ask me how they make that!, olive oil for butter, low fat low sodium broth, and skim (or part skim cheeses in this recipe and I'm good to go with very little sacrifice on richness or flavor. I also hate fishing out bay leaves so I use bay leaf powder.(old bay seasoning also adds a nice zippy flavor instead of bay leaves, about one tablespoon.

I diced up the carrot super tiny and added the broccoli (small chopped and steamed at the end. I don't like the soup pureed. The flavor is fantastic. My husband had thirds!

The taste itself was good but it was so thick! Had to add like 1 1/2 cups of chicken stock to thin it out without loosing flavor. Once I did that it was delicious.

The overall taste is pretty good, however, the recipe calls for you to blend everything which makes the broccoli into little fine pieces and makes the overall soup gritty. Some of the other comments state it tastes just as good as Panera Bread well my entire family will disagree to that! I may try the recipe again and puree the onion and carrot only and not the broccoli to see if that makes it any better.

I was so excited about this soup and more so when I read people's comments like "better than the Panera's", etc so I made it and it was terrible! it's really thick and too many flavors plus like 1000 calories every spoonfull WHICH is not even worth it. Sorry but we hated it

This recipe was very easy. it was delicious. My two year old gobbled it up and my husband loooved it as did i. I followed the recipe with the exception of low sodium chicken broth, I ommited the nutmeg, and I did not use the bread bowl. I finished it off with some cheddar cheese and chives and it looked as beautiful as it tasted!
