Ingredients

  • Cooking spray
  • 3/4 cup sugar
  • 1 tablespoons honey
  • 2 teaspoons vanilla extract
  • Kosher salt
  • 2 cups unsalted raw peanuts

Directions

Preheat the oven to 375 degrees F with a rack positioned in the middle of the oven. Lightly coat a rimmed baking sheet with cooking spray.

Combine the sugar, honey, 3 tablespoons water, the vanilla and 1/2 teaspoon salt in a large heavy-bottomed pot. Cook over medium heat, stirring with a wooden spoon, until the sugar dissolves completely. Add the peanuts and cook, stirring occasionally, until the mixture begins simmering, about 1 minute. Increase the heat to medium high and continue cooking, stirring constantly, until the sugar mixture starts to dry out and clings to the nuts, 2 to 4 more minutes. Pour onto the prepared baking sheet and spread in an even layer.

Bake the nuts until the sugar coating begins melting, about 5 minutes. Continue baking, stirring occasionally, until the nuts are golden brown and glazed in spots, 6 to 8 more minutes. Remove the baking sheet from the oven and stir the nuts to distribute the caramel. Let cool on the baking sheet. Store, covered, at room temperature for up to 1 week.

    Total fail. This should never be allowed on this website, I wasted a bunch of food thanks to the complete lack of care, form the author. Very disappointed here in Wisconsin.

    Well, I wish I had read these reviews BEFORE I tried this, but at least I know I am in good company with this failure of a recipe. I had expected the coating to stick to the nuts, but the nuts were just swimming in syrup. But, I put them in the oven anyway. Luckily used my worst cookie sheet sprayed with cooking spray. About 5 minutes into the baking time I saw smoke billowing out of my oven and then my smoke alarm was going crazy. It was like total reflex that I was able to get them out in time. Spent an hour with every single window open and the ceiling fans going. The nuts made this sheet of brittle on my (now defunct baking sheet and would not come off. Save your time, save your money don't even try this. Saw the recipe in Food Network magazine. Can't believe it made it into the magazine.

    Worst recipe - ever! I followed directions and it burned. My daughter asked if I read the reviews. Sadly, not until I wasted time and money trying to make the recipe. The Food Network should remove this from their website.
