  • 2 cups dry elbow macaroni, cooked, rinsed, and drained
  • 1/3 cup diced celery
  • 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
  • 1 tablespoon minced flat-leaf parsley
  • 1/2 cup diced vine-ripened tomato (optional)
  • 1/2 cup prepared mayonnaise
  • 3/4 teaspoon dry mustard
  • 1 1/2 teaspoons sugar
  • 1 1/2 tablespoons cider vinegar
  • 3 tablespoons sour cream
  • 1/2 teaspoon kosher salt, plus more to taste
  • Freshly ground black pepper

Directions

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using. In a small bowl, whisk together the mayonnaise, mustard, sugar, vinegar, sour cream and salt. Pour the dressing over the salad and stir to combine. Season with salt and pepper to taste. Serve. Store covered in the refrigerator, for up to 3 days.

<span>Really loved this! I backed off on the vinegar and only added a tablespoon. I thought it was rather powerful still, but once all the flavors melded, it was fabulous! Much lighter tasting than the traditional mac salad. You need that punch of flavor because the dressing really is 'just enough' to cover. I also added some sliced olives. A keeper! Just made this recipe as printed. Tasted it for seasonings and most certainly thought that less vinegar would be a good idea. AFTER I had tasted it, I added a bit of chopped red pepper for colour and a dash of tabasco, dash of cayenne and cubed up some smoked ham. So I rated this 4 stars based on flavor obviously, but I suggest backing off a bit on the vinegar. Having said that, maybe after it sits for several hours in the fridge, it will mellow more. This is so good! It makes a huge amount, so I'll be making it for the 4th of July. My mom's is just about like this except she would cut very sharp cheddar cheese into little cubes and add it. It was very good. I tried it and it's delicious. First time I ever remember having this, was at my Aunt's house a LONG time ago. I remember hers having green bell pepper. The green pepper is good but most always shuts down the other ingredient's flavors. I think the best thing in this dish is the celery. I would make it again by adding a few of my own ingredients. I would like to add maybe a few raisins for sweetness. I love macaroni any way you put it in front of me. Delicious option for an easy and classic summer side dish. I made some substations based on what ingredients I had on hand: No celery, so used chopped carrots for crunch, and added in scallions, fresh dill and sweet relish for a more tangy flavor. The dressing was very tasty but I had added in some lemon juice, cayenne and garlic powder and used only about 1/2 the sugar the recipe called for. Really, really good ol' macaroni salad. Made a day in advance so pasta absorbed the dressing and it looked really dry by serving time, although it maintained great favor- so I moistened it with equal amounts of a spoon of sour cream, mayonnaise and water. That's it. Reminiscent of Mom's but she used scallions instead of onions and more parsley- I might try it that way, but since this was so successful, I just might leave it alone. I made this recipe as-is with two adjustments: 1. I omitted tomatoes, as no one in my family eats them. Instead I added 1/4 cup red bell pepper. 2. I added 1/8 tsp ground cayenne pepper as an additional seasoning. The amount seems minimal, but when cayenne has been ground it&amp;#39;s very strong. It added zest without being overwhelming. To me this is a perfect macaroni salad as written. Clean, light and fresh tasting, and not too sweet. My only suggestions are not to skimp on the quality of the ingredients: If your dry mustard has been opened for more than 6 months, replace. I use Colmans but McCormick is fine if it was just opened. Don&amp;#39;t use store brand mayo unless you love the flavor. I use Hellmans. And dried parsley is never a substitute for fresh. Flat tastes better than curly. For tomatoes, I use plum as they are meatier and have less seeds. Always seed the tomatoes. If you prefer a sweeter salad, just add 1 T of sweet pickle relish. And make sure it sets for a couple hours at least. I admit different people taste things differently and my sense of taste is not as keen as my wife's. But, given that, following the recipe, I found the result bland and overdressed. This is a very good recipe. I tweaked it slightly buy adding a sweet onion instead of the red onion and I added some lemon juice to the dressing to give it an even more lightened flavor. I also added in some broccoli slaw to bulk up the veggies since i am trying to get my husband to eat more of them... I reversed the amounts of mayo and light sour cream since you only need a hint of the mayo flavor. I do that with most of the recipe that calls for mayo.. I use mostly fat free or light sour cream or greek yogurt. It is a great side salad in the summer. Simply delicious!...simple dressing and yes, sour cream does make the difference! I doubled the dressing and added a little extra to our liking. Per previous reviewers suggestions, I made sure the macaroni was rinsed, cooled &amp; well drained. Added green pepper, and "vidalia onion" instead of red onion...more pleasing to the palate if your not worried about presentation. A fool proof recipe that can be tweaked to your palate. Best mac salad ever! Instead of tomato I add seasoned black olives, and I also add tiny cubes of sun dried tomato ham (1 slice cut at a 7 for a double recipe. I always have to double the recipe for get togethers and have never had any left overs. You do want to make sure your pasta has cooled completely otherwise it looks dried out, but the taste isn't effected so it's just a matter of preference. I love to just snack on this by itself, it's just that good! I doubled the recipe (used a 16oz box of noodles, and as others suggested, soaked the chopped onions in white vinegar for approx. 15 min. I love onions, so additionally, I added some that weren't soaked too. It didn't seem like there were a lot of ingredients, so I added 4-chopped hardboiled eggs, and 1-can of chopped black olives. This is an easy an delicious recipe for macaroni salad any time of year. I was tired of the ones that are overly thick and gooey with too much mayo or egg in it. This one is actually light and fresh tasting. I think the tomato really adds a nice flavor, but for anyone who doesn't like tomato it would be fine without. Only thing I did different was using a shallot because I didn't have a red onion, and instead of chopping some fresh tomatoes, I used a can of Ro-Tel including all the liquid. Pretty bland, added some thawed frozen peas for color, added prepared yellow mustard for some additional flavor, used grape tomatoes but left them whole so they wouldn't leak juice into the salad and make it watery. I used Dreamfields brand elbows to make this lower-carb for a diabetic-friendly side-dish. I think it needs more acid and will probably adjust prior to serving. This was wonderful! It was the easiest salad to make. The dressing was the best. I'm going to use that for my potato salad! I soaked the onions and tomatoes (a suggestion from one of the reviews in the apple cider vinegar for about 15 mins. What a difference it makes! Then just pour the juice into the mayo mix. This is delicious! It's not that gloppy, sugary stuff you get at the grocery store. It is light and has real flavor. I got a great tip from the Test Kitchen.I also don't like the strong taste of red onion.It can overpower other flavors. The trick is to put it into a bowl separately with the vinegar. My future sister in law loves this macaroni salad mainly because she's not a huge fan of salads made with just mayonnaise. The sour cream really does make this macaroni salad wonderful. I usually make one box, or 1 lb of dry macaroni. I actually then triple the recipe, but only use 1/4 teaspoon of dry mustard so that it's not too spicy. I add petite steamed peas to it. I just run them under cold water for a minute or so in the strainer before adding them. Everyone seems to like it that way. I don't add all of the sauce at once and cool the pasta before adding it. This was very popular at the social I took it too, although I can't say people just raved about it. I made it almost exactly according to the recipe. I used less than the called-for amount of onion because I don't like a strong raw-onion flavor. I also doubled the dressing. I added small bell peppers in it too. Since I didn't have cider vinegar, I substituted it for diluted red wine vinegar. The sauce will appear thick until you add the vinegar. Then it will seem thin until you combine it with the pasta. It tastes great! It tends to become a little less juicy, more drier, once in the fridge for a couple of hours. Maybe if serving this dish a little later, do not combine the dressing and pasta immediately. I found this recipe a couple of years ago and have been making it ever since. I followed the recipe the first time, then I made a couple of changes. I use scallions instead of red onion, dill instead of parsely and I also add sliced black olives. I absolutely love the chopped tomato, which I never would've thought to put in macaroni salad, but I seed the tomato because I hate the seeds! Also, I usually double the dressing so I have more to add if it needs it because pasta really sucks up dressing like a sponge! Truly a great recipe! I loved the base but thought it needed a little more something. I added a half a green bell pepper, half a red bell pepper and a can of black olives. I also added a little more of each of the veggies listed in the recipe. After that it was awesome!! item not reviewed by moderator and published

Next time try squeezing out the juice/seeds of the reg. tomatoes, if that is all you have on hand, and what is left is the actual 'meat' of the tomato..no runny mess! item not reviewed by moderator and published
it's apparent that people have lost the value of less fat, mean maybe losing weight. That is how/why people are in the shape they are in in the first place.
