Having made mac salad for many years here are a few variations with less salt and sugar in them... first, there is no dairy in mayo. Eggs are not dairy, they come from a chicken. Try adding bell pepper instead of tomatoes (tomatoes tend to add water to the salad. Instead of using any salt at all, try adding bacon bits (or synthetic ones, which I don't use but vegans do. Use yellow mustard instead of dry. Add chopped hard boiled egg. Minced sweet onion is nice but only a teaspoon. I've never used sugar. If you want it sweet, use "Miracle Whip" instead of mayo (another product I never use. Mayo and bacon contain more than enough salt. As to sour cream and vinegar, they would make the salad quite pungent. I'd experiment off to the side before I added them to the main dish. Keep it simple, keep it honest.

Just made this for Memorial Day weekend ahead of time and I want to dig into it before hand. Perfect blend of all ingredients. I have a feeling it will be asked for again!

I make this with a few variations. Since I'm a vegan a subbed a non-dairy mayo and omitted sour cream, as well as the sugar (didn't want the sweetness. I finely chopped a couple of dill pickles and grated a carrot, and used 2 tsp Dijon mustard instead of the dry. It turned out great and is a nice filling for summer tomatoes that have been cut in half and hollowed out, or wrapped in lettuce leaves and rolled.

ok so this was good but it was a little dryier than the usual macroni salad that i'm use to, I added more sour cream and mayo after it chilled in the refrigerator. Not sure if I'll be making this again, might have to keep looking for another recipe.

Awesome! Had to double the sauce because it was a little dry. I also added the Tomatoes, Cider vinagar, and some mustartd to give it that little zing!

My husband's work asks him to bring this Macaroni Salad for every potluck because they really like it. I use the large elbow macaroni and leave out optional tomatoes. I double the batch and triple the dressing. I save a third of the dressing to mix in right before he goes to work in the morning. Delicious! I'm so happy to finally have that "thing" everyone asks for.
