    The soup was delicious and fairly easy to make. Only changes I made was adding an extra small apple and I used apple juice instead of apple cider because I couldn't find any at the store! My boyfriend loved it....my daughter, not so much because she's not into butternut squash. Definitely going to make it again. Probably when my daughter is at my moms.

    This is an amazingly simple and straightforward recipe. It came out fantastic. All but my picky brother (doesn't every family have one loved it. I should note we substituted soy milk for the milk and it worked great.

    I just made this AGAIN today. Everyone eats it right up. I have to say that I have tweaked it.
    I use coconut milk instead of regular milk. I also grate in fresh ginger root, and I add a good TBSP of curry powder, maybe a little more. Taste it and adjust to your liking and heat.

    Today I used the butternut squash after roasting it in the over for an hour. Another time I just threw it in the pot as stated in the original recipe. Either way is fine.

    I also throw in a scotch bonnet pepper because of the wonderful flavor it adds, BUT, you have to fish it out before you put it in the blender or you will not be able to eat it.
    Once it is blended and poured back into the pot, your can throw the pepper back in.

    Get some fresh bread and this is a meal. The coconut milk is lovely as is the curry powder (we use HOT and ginger root. Sometimes I add the cheese, but not today and nobody even noticed. Less calories is all. Talk about yummy on a cold winter day~

    This is an incredible soup recipe. I have made this multiple times and bring it to dinner parties. Always a huge hit!! I tend to use 3 differant types of apples. I like the extra sharp cheddar as well. Great winter time soup!!

    This is my family's favorite soup!! However we make it vegan and gluten free. Sweet potato instead of white potato, no flour (it isn't really needed, almond milk instead of cow's milk, no cheese and we don't puree it. I also use a pre-made butternut squash soup instead of the chicken stock. It's absolutely delicious. It was a hit at a soup swap we had a few weeks ago. Even better when using freshly juiced apples! Enjoy!

    My family LOVED it! I substituted some leftover bacon that was in the fridge, and oops! I totally forgot the flour! And I should probably not admit this but instead of apple cider, I poured in a little Mike's Hard Cranberry Lemonade, and it worked great! I used an immersion blender and made myself a note to blend it prior to adding the cheese next time, in the interest of having an easier time cleaning the blender. We look forward to having this again soon!
