This recipe does not deserve five stars. I made this yesterday and my husband and I thought it was okay, but not great. Definitely not something I would make again.

My husband and I loved this. I changed it just a bit by omitting the potato because I had a lot more squash than was called for and wanted to use it up. I also used only 1 TBSP. of flour because I didn't want it to be too thick. Used bacon instead of prosciutto, because that's what I had. Served it with some homemade buttermilk biscuits. So tasty, will definitely make this again.

Excellent! I love anything made with butternut squash and this soup made with apples is very tasty. I used my stick blender to puree the cooked soup and it turned out perfectly. Husband and kids loved it. Will definitely make again.

OMG!!!! Delicious!!! I was a little skeptical......but this soup is great and easy to make!!!! This is my family's first time eating butternut squash and we all love it! We will make this soup again, again and again! Enjoy!

This was the first time I have ever made soup and it was amazing!! Always thought that soup took sooo long to make, this one didn't at all. Longest part of this is the prep because of all of the ingredients, after that it is easy!

Loved this recipe. Used one Granny Smith and two little Gala apples. Found the proscuitto too late and just used Hormel Real Bacon bits. Might add a dollop of sour cream instead of the extra sharp cheddar for the finish. Great use of the butternut squash that's been staring at me for months! Makes more than four servings, closer to six. Thanks for this one. Oh, I forgot! I opened the box of broth and then it was too late! It was beef broth. Still fantastic!

We make this a LOT - it is wonderful with rich flavors; comforting and inviting. Have used bacon instead of proscuitto in a pinch. Also use one gala apple, one golden delicious. Love this soup!

I wanted to like this. I used all fresh ingredients, apple cider from a local orchard, and followed the recipe with very, very few exceptions. I put in a *little* bit less chicken broth (I'm talking less than a 1/2 cup under and I also added a bit of seasoning salt. I cooked the onions slow, adding the squash next, then potato, then apple. At the end, the texture was perfect - not too soupy, not too thick, but just right. I pureed it, and put it in my bowl. The flavor of all these things mixed together was not good, but totally weird. I didn't taste apple, all I tasted was a weird texture and just a not very good flavor - I can't quite describe it, but the cheese mixed with the sweetness of the squash/apple made my stomach queasy. I ended up dumping the entire pot and sitting on my couch and whining. I am pretty sure I didn't do anything wrong, I am just guessing I am one of few who didn't like this soup.
