One of my favorites! I love it so much that I have been using it in different variations. My latest "cajunized" it a bit. I defrosted some dungeones crabs then poached them in the soup, shelled them then added to the soup. I also thickened it up with an extra potato and more flour. Served it over rice to eat like a bisque. Also added tabasco. Absolutely Amazing!!!!!!!!!

I absolutely love this soup..... I make it exactly the way it is, but if you dont like the sweet hint in it, use good splash of apple cider vinegar instead, give less sweetness and more tangy note in the back ground. just dont over pour, make sure under a 1/4c. love this.

Made this today and it was AWESOME! Made it exactly to the recipe except used water in place of the cider since some said that made it too sweet. Next time I'll try with cider since the apple flavor got lost for me. Squash and cheddar flavors were nice and up front. Definitely a yummy comfort food - great for cold weather!

Delicious! I used rosemary instead of sage (didn't have sage, dumped in a bunch of garlic powder, a couple pinches of chili powder/dill, and included some smoked provolone, parmesan, and manchego cheeses since I had them around. Happily, these upped the savoriness of the soup a bit but didn't completely overpower the wonderful touches of apple/sweetness. I forgot to half the recipe (only cooking for 2 here but neither of us is complaining about having this soup around for awhile :.

We can't stop talking about this soup 5 days later. Everyone asked for the recipe. Its creamy and rich without being to heavy. Bread for dipping is a MUST!

I have made this soup many times, and I still love it! I have made it with prosciutto or bacon, and with or without the cider. Both were great! I increase the recipe so I have enough to freeze, but it never makes it to the freezer! I wonder if an immersion blender would work here...
