This was an easy dinner option and our family loves asparagus. I however do not have a skillet that can be put in the oven so I pre-heated my oven to 425 and followed the recipe except I mixed the egg mixture, asparagus and bacon into a casserole and baked it for 20 mins. It turned out pretty good. I think it could have used more cheese.

This went very well with grilled pork tenderloin and a tossed salad.

very good, the only thing that I will change next time I make this is less lemon peel, I also added 2 Tbsp of chopped onion. This was awsome....

This was dinner after getting home from a weekend getaway. I used fresh broccoli instead of asparagus. Total hit from the kids to the adults. Looking forward to swapping add-ins around the next time.

Easy, tastes great and easily modified - turned out of cast iron pan easily. I would not put my nonstick under the broiler. Used chopped fresh spinach and topped with hollandaise...yeah kinda like eggs benedict florentine.

I've always enjoyed making frittatas. This is the best one, yet. It just tastes so sophisticated.

I had never made a fritatta before - but this recipe was so easy! I used proscuitto instead of canadian bacon (added it just before adding the egg to the skillet. I don't know if it was the ham or the parmasean or both, but the dish as on the salty side (and that's saying alot coming from me! , so perhaps next time I would omit the kosher salt. Though my friend who ate the other half of the fitatta didn't mind how salty it was.

I sort of "halved' the recipe because I only had three eggs and was only cooking for two anyhow but it was easy to do. I served it with plain Greek yogurt and honey. Will DEFINITELY be making again!
