I had doubled this recipe for a party and ended up with loads of the dressing. It was so delicious that everyone raved about it and the other salads were left alone. The extra dressing has lasted me all month as my family kept wanting more! My picky 12 year old loves it so much that I am making more dressing for more salad right now.

This salad was as good as anything I have gotten in a gourmet restaurant. It is easy to make, and taste delicious. I am sure this would have been just as good with the plain chopped pecans. However, I stepped it up a notch by leaving the pecans whole, and sugar coating them. My guests loved it!

This salad was so delicious and easy to assemble. The combo of goat cheese and the red onion was amazing and the dressing just brought it to another level. My guests thoroughly enjoyed it. They compared it to a restaurant style salad. Make sure you use the best ingredients because of its simplicity. Will be serving this again and again. Saved it to my recipe box!!

Dressing is delicious....mouth watering combo of flavors!!! I used 1 bag of baby spinach and about 1/4 of a cup dressing. You will have alot left over. Don't overdress! The roasted red onions ARE A MUST and adds a wonderful flavor! Definitely taste test and add more honey, mustard to your taste. I ended up adding a little more honey. This is just delicious!

I used a baby spinach / baby lettuce blend and left out the parsley in favor of more tarragon & basil. Guests asked for the recipe, so a winner!

In my quest to eat more dark greens, I've forced my way through many spinach salads. I don't love raw spinach, or bacon. This is the first spinach salad I really liked. It does help that I like citrus, red onions, goat cheese, cranberries and pecans. All the flavors work very well together and I love all the dfferent textures. Having both on hand, I tested the salad with both unsweetened and sweetened cranberries (I prefer the unsweetened ones to munch on as a snack. i prefered the sweetened ones in this salad, though. Now, if only I can find a reason to like green tea....

This is the salad of my dreams. I could eat it for every meal. You can also adjust the oil level so it is a bit healthier.
