Very simple... and outstanding. I have tried something similar by another Food Network chef with southwest spicing and the ingredients just got in the way. This recipe does not mess with a good thing. Loved it.

This is one of our favorite recipes. I make it all the time for breakfasst and my husband loves it. I like to use frozen hashbrown potatoes to save some time and I also add bacon or sausage if I have it on hand. Love it!

This was a really easy dish to make, I like the proportions, the spices, everything. I might have added a little more parsley and garlic, but that's my taste. One issue I had was the time/temperature settings in the oven. I followed the directions exactly and my eggs came out with hard, not runny yolks. So check the eggs occasionally to make sure they're not getting overdone and then add the cheese and just put it in the oven for about 15 seconds, just enough to melt it.

I was just looking through the FN site, getting more hungry as I went. Being 9:30am. it was time to figure out what to make for breakfast. Something I could make with things I already have in the house, fast and easy. This was perfect! I did use hashbrowns I already had and it worked fine. All four of us liked it including my very picky 14 year old. I will definately make this again.

im in the biz so i twisted it up a bit- steamed the potatos for 15 min; then deep fried them for 10 min; sauteed onions to clear; put the potatoes; garlic, s&p ; parsley into the skillet with about 12oz of corned beef scraps!!! i put the cheese on top after 10 min on the oven and finished in the broiler. eggs came out medium, potatoes were crispy- awesome! thanks food network kitchen!!!

I would cook the potatoes longer next time...in the oven before adding the eggs. I don't feel they were all cooked all the way through. I will also add spinach and some crushed red pepper flakes to give it more flavor.

great recipe... this is one you don't think of but is so good. I cook the potatoes longer then it says but I like them crisp and when it says a minute longer.... it's a minute otherwise the eggs will be more on the hard side.

A well seasoned cast iron skillet makes a big difference. I bought the Lodge skillet from Food Network store. Price is very reasonable.
