I've made this recipe 3 times. The first time I accidentally burned it because I used a dark pan and forgot to lower the temperature. Despite that, the flavor was still great. The last two times, the bread came out perfect.
I use bananas that are well over ripe, so that when I mash them, they are nearly liquid with a few chunks. It adds to the sweetness of the bread. Sometimes I don't add the walnuts, but that doesn't deter from the recipe. When you cream the sugar and butter, cream it for a good 5 minutes before adding other ingredients. I also line my pan with foil (and butter the foil so that it makes it easier to remove the bread from the pan. I have never had the center collapse on me, though. My family loves it, with or without walnuts. And it's a great way to use up bananas that no one is eating.

I have baked many, many Banana Nut Breads. I've played around with recipes adding oatmeal, dried cranberries and it always comes out fine. My most often used recipe is Flour's Famous Banana Bread recipe on this site but I decided to give this one a try. I will never use this recipe again.
The flour to butter/sugar ratio was so off. That plus the eggs and THREE bananas kind of scared me. I knew it was going to be a wet batter but I followed the recipe. It looked great when it came out, toothpick came out clean... Only to come back an hour later and the center of the bread had completely colapsed.
I was suspicious when the toothpick came out clean because there was no crumb on it. Well of course this is going to happen with this recipe people! There is almost NO flour in it.
Won't use this again. Pick Flours Famous Banana Bread or Tyler Florence's Banana Pecan Bread!

i have tried this recipe two times. The first time it stuck to the pan. The second time it sunk in the middle (very unattractive I might add!. The flavor is good, but it doesn't seem to work for me otherwise.

I made this banana bread but I substituted Splenda for sugar and 50/50 butter instead of real butter. This came out great and think of all the calories I saved!

This banana nut bread was excellent. I am a pretty good cook when I stay focused on what I am doing. Instructions were precise and easy to follow. Thought I messed up when I tossed in the nuts before the dry mix, but stayed with the rest of the instructions and perfect.
