I really liked it, made it just the way it was written. One time I was out of dried apricots and substituted the green raisins and that worked well too.

A new staple for our family! Everyone at the table raved over the flavor, the texture, aroma, and the presentation. WOW! This rice dish is packed with subtle flavors that compliment each other tremendously! I can see me making this rice dish as a main dish for me it was 'that' good. I used toasted cashew pieces instead of pistacios and enjoyed the buttery crunch. The mint adds wonderful freshness and brightens this amazing dish! A must try!

Deliciously different and easy side. Now I just have to figure out how to pull it off in a rice cooker....

WOW. I was amazed at how easy and delicious this recipe was! I forgot the bay leaf, but the rice still came out perfectly. I'll definitely make this again!

This was absolutely delicious. So fragrant and unique. The mint and pistachios topped it off perfectly. I wouldn't change a thing about it!

I made this recipe the first time and it was great. Now I have made it using raisins rather than apricots and cilantro instead of mint. I just use what I have and it's turned out great every time.

Delicious flavor. On an electric stove top had to took the rice longer than the recipe indicated (about 16 min + 5 min rest

This pilaf is lovely, very fragrant and the rice grains were unbelievably tender. I omitted the mint on purpose (not a fan and the bay leaf by accident because the recipe body doesn't mention it at all! Next time I'll add it right before turning the heat down on the rice.
