By far, the best stew I've ever made. If you are searching for a beef stew, your search has ended right here. I made it tonight after reading other reviews. Prepared as recipe with minimal changes: added some sage to the bouquet; and used 2 cups of mushroom broth (Pacific brand to the 8 cups of beef broth (Swanson. Husband couldn't stop commenting that it was the best ever.

    A definite keeper.

This is by far the best stew I've made, EVER! Maybe the best I've ever had. When it says to dump out oil after browning meat and wipe out, I just dumped. Then I put pan back on heat and added a couple of cups of water and scraped up the brown goodies on the bottom of the pan. it was better than just using plain water. It gave it a beautiful rich brown color. I also added red wine (zin as part of the lquid. I will add more veggies next time as I ended up with a lot of sauce. All the better for sopping up with my rolls! don't hesitate to make this!

Even my 18 month old loved this stew! I didn't have any fresh thyme, so I used rosemary instead. It was amazing! I love the flavor of rosemary. I served the stew with some breadsticks that I baked with a little olive oil, rosemary and pepper. A very satisfying meal.

I put 4 cups beef broth and 2 beers plus 2 cups of water and some mushrooms, green beans and a bag of frozen vegetables. It was a little watery when I took it out of the over after an hour and a half so I cooked it on the stove top with the lid off for the remaining amount of time. It was excellent would definitely make it again.

This was a nice flavourful stew except you need to double the amount of vegetables ,I only uesed 8cups of stock still it was a very thin stew, so at the end i used instant potatoes to thicken . The dumplings were a very nice addition

This was absolutely perfect -- unlike previous viewer who found the broth thin, I used 8 cups beef broth and two cups water and it was still nice and thick. I may have used more flour -- I didn't really measure it to 1/3 cup, just sprinkled it on to cover.

I added green beans and some quartered mushrooms to make it more of a complete meal -- I love beef and mushrooms together. Used fire-roasted diced tomatoes instead of whole. It was wonderful, and even better the next day. I recommend serving with crusty bread or cornbread. My family loved it!

This stew was soooo yummy!! Although it was hard for the family to have the yummy stew smell brewing in the house for so long- they couldn't wait for it to be finished. I used 3 parts beef stock, one part chicken stock, and some red wine I had left over. I think next time I will reduce the amount of liquid to 8 cups becuase the end product was a bit thin (but ooooo so good. Also I also recomend cutting veggies smaller. The vinegar was a nice touch! This was my first homemade soup/stew ( I'm learning that I actually love to cook! and turned out perfect because by the time it was done an inch of snow had fallen. I will make this again.
